Almond Chia Pudding


“You say you don’t have time to cook… Come over here and take a look… It’s smooth… it’s cool… it breaks the rules! Chocolate, cherry, sweet strawberry! Who says you couldn’t, have instant ALMOND CHIA puddin’ … not J-E-L-L-O!”

Okay so, I changed a couple words from the Corrina Corrina jingle (have you seen that movie?), but it felt appropriate for this post. This was so yummy and so easy, and chia seeds fill you up for days. Well, not days but for most a couple hours, in my case, a couple minutes… I eat a lot, remember?

I’ve been putting chia seeds in everything lately. I’ll make a giant batch of hibiscus tea every weekend then separate in mason jars with chia seeds. It’s kind of my version of that Synergy drink. The texture of chia seeds is definitely an acquired texture – I LOVE it, but it might be kind of strange to some. They get a gel kind of texture, so if you’re not a pulp juice drinker, then most likely you wont like these. But I totally recommend trying – they have SO MUCH goodness in them!

What you’ll need:

  • 3/4 cup almond milk
  • 3 tbs chia seeds
  • 1/2 tsp vanilla
  • A couple strawberries or fruit of your choice (optional)


Pour almond milk, chia seeds, and vanilla into a glass and stir well. Cover and refrigerate for at least an hour. I left mine overnight for breakfast this morning. When you’re ready to eat, add your berries and badabing badaboom, almond chia pudding!

If the texture is too thick when you go to eat it, add either a little more almond milk or some water to the top. You can add things like honey, or I’ve added a little chocolate syrup before, if the taste is too bland. Make sure you stir it really well before eating!
